Grilled Shrimp Skewers with Garlic Butter Sauce

Tender grilled shrimp skewers marinated in a savory blend of olive oil, lemon, garlic, and herbs, finished with a rich garlic butter sauce for bursting flavor. Perfect for quick meals, salads, or grain bowls.

  • 1 to 1.5 pounds large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • 1/2 cup unsalted butter
  • 12 cloves garlic, finely minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, finely chopped
  • Juice of 1/2 lemon
  • Wooden or metal skewers (soak wooden ones in water for 30 minutes)

Instructions

  1. Whisk together olive oil, lemon juice, Dijon mustard, 4 minced garlic cloves, garlic powder, oregano, lemon zest, salt, and pepper in a bowl. Add shrimp, toss to coat, and marinate for 30 minutes at room temperature or up to overnight in the fridge.
  2. Thread marinated shrimp onto skewers. Preheat grill to medium-high heat (350-400°F). Grill skewers for 4-5 minutes per side until shrimp are opaque and just cooked through.
  3. While grilling, melt butter in a saucepan over medium-low heat, stir in 12 minced garlic cloves and cook for 30 seconds. Remove from heat and whisk in Parmesan, parsley, lemon juice, salt, and pepper.
  4. Brush grilled shrimp with warm garlic butter sauce. Serve immediately with lemon wedges and extra sauce on the side.

Notes

Use jumbo shrimp for best results as they stay tender on the grill. Don’t overcook—shrimp turn rubbery quickly. For extra flavor, reserve some marinade to brush on during grilling. Pairs well with salads or grilled veggies.
