For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 4 cups mixed greens (lettuce, spinach, arugula)
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp balsamic vinaigrette
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Brush chicken breasts with olive oil and season with garlic powder, paprika, salt, and pepper.
- Grill chicken for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes before slicing.
- In a large bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
- Top the salad with sliced grilled chicken and crumbled feta cheese.
- Drizzle with balsamic vinaigrette and toss gently before serving.
