Grilled Chicken Avocado Salad

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp balsamic vinaigrette

Instructions

1. Prepare the Crust:

  1. Preheat grill to medium-high heat. Brush chicken breasts with olive oil and season with garlic powder, paprika, salt, and pepper.
  2. Grill chicken for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes before slicing.
  3. In a large bowl, combine mixed greens, avocado, cherry tomatoes, and red onion.
  4. Top the salad with sliced grilled chicken and crumbled feta cheese.
  5. Drizzle with balsamic vinaigrette and toss gently before serving.

You can customize the seasonings to taste.
