Grilled Chicken Avocado Salad

A fresh and healthy salad with grilled chicken, creamy avocado, and a zesty lime dressing.

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 ripe avocados, diced
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/4 cup cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Preheat grill to medium-high heat. Season chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
  2. Grill chicken for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice into strips.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and diced avocado.
  4. In a small bowl, whisk together lime juice, olive oil, honey, and cilantro to make the dressing.
  5. Add the sliced grilled chicken to the salad and drizzle with the dressing. Toss gently to combine and serve immediately.
