For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 2 ripe avocados, diced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 tbsp honey
- 1/4 cup cilantro, chopped
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Season chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika.
- Grill chicken for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice into strips.
- In a large bowl, combine mixed greens, cherry tomatoes, red onion, and diced avocado.
- In a small bowl, whisk together lime juice, olive oil, honey, and cilantro to make the dressing.
- Add the sliced grilled chicken to the salad and drizzle with the dressing. Toss gently to combine and serve immediately.
