For the Crust:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter
- 1 cup water
- 1/4 cup cocoa powder
- 1/2 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- 1/2 cup creamy peanut butter
- 1/2 cup chopped pecans (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a saucepan, melt butter with water and cocoa powder over medium heat, stirring until smooth. Pour over the dry ingredients and mix well.
- Add buttermilk, eggs, vanilla, and mashed banana. Stir until combined.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- While cake is baking, prepare the peanut butter frosting by mixing peanut butter with powdered sugar and a splash of milk until smooth.
- Spread frosting over the warm cake and sprinkle with chopped pecans if desired.
