For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups finely chopped apples
- 12 soft caramel candies, unwrapped
- 1/4 cup brown sugar
- 2 tbsp cold butter, cubed
- 2 tbsp all-purpose flour
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix buttermilk, melted butter, eggs, and vanilla. Pour wet ingredients into dry and stir until just combined. Fold in chopped apples.
- For streusel topping, combine brown sugar, cold butter, and flour with a fork until crumbly.
- Fill muffin cups halfway with batter. Press one caramel candy into the center of each, then cover with remaining batter. Sprinkle with streusel topping.
- Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool for 10 minutes before serving.
