Gooey Caramel Apple Buttermilk Muffins

Moist buttermilk muffins filled with tender apple chunks and a gooey caramel center, topped with a sweet streusel crunch.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups finely chopped apples
  • 12 soft caramel candies, unwrapped
  • 1/4 cup brown sugar
  • 2 tbsp cold butter, cubed
  • 2 tbsp all-purpose flour

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix buttermilk, melted butter, eggs, and vanilla. Pour wet ingredients into dry and stir until just combined. Fold in chopped apples.
  4. For streusel topping, combine brown sugar, cold butter, and flour with a fork until crumbly.
  5. Fill muffin cups halfway with batter. Press one caramel candy into the center of each, then cover with remaining batter. Sprinkle with streusel topping.
  6. Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool for 10 minutes before serving.

Notes

You can customize the seasonings to taste.
