Gooey Boston Cream Pie Cookies

Soft vanilla cookies filled with a rich custard center and topped with a glossy chocolate glaze, inspired by the classic Boston Cream Pie.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup vanilla pudding or custard, chilled
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Gradually mix in dry ingredients until just combined.
  3. Drop tablespoon-sized balls of dough onto prepared sheets. Bake for 10-12 minutes until edges are lightly golden. Let cool completely.
  4. Spoon a small amount of custard onto the flat side of half the cookies. Top with remaining cookies to form sandwiches.
  5. Melt chocolate chips with heavy cream, stirring until smooth. Drizzle or spread over the top of each cookie. Let set before serving.

Notes

You can customize the seasonings to taste.
