Real Sopapillas

This irresistible Sopapilla recipe makes golden, puffy sopapillas that are crisp on the outside and soft inside, perfect for drizzling with honey or dusting with cinnamon sugar.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 2 teaspoons kosher salt
  • 1 tablespoon honey
  • 3/4 cup whole milk
  • Canola oil, peanut oil or lard, for frying

Instructions

  1. Whisk together the flour, baking powder, sugar, and salt until combined.
  2. Make a well in the flour mixture and pour in the honey and milk.
  3. Stir until a dough forms, then rest the dough for 20 minutes.
  4. Cut the dough into squares and roll out each piece to about 1/8-inch thickness.
  5. Heat oil to 375°F in a cast iron skillet or medium pot.
  6. Drop the dough squares into the hot oil and fry for about 1 minute per side until lightly golden and puffed.
  7. Remove with a spider or strainer and drain on paper towels.
  8. Serve immediately with honey or dusted with cinnamon sugar.

Notes

Test a single sopapilla first to ensure the oil temperature is correct and the dough is rolled thin enough to puff properly. Sopapillas can be served sweet with honey or cinnamon sugar, or savory alongside dishes like mole or enchiladas.
