Golden Baked Brie with Caramelized Apples and Thyme

A flaky puff pastry-wrapped wheel of brie topped with buttery caramelized apples, maple syrup, and fresh thyme. This warm, creamy appetizer is perfect for holidays or gatherings.

  • 2 Honeycrisp apples, thinly sliced
  • 3 tablespoons salted butter
  • 3 tablespoons maple syrup
  • 1 sheet frozen puff pastry, thawed
  • 1 wheel of brie (812 oz)
  • 2 tablespoons apple butter or fig preserves
  • 1 egg, beaten (for brushing)
  • Coarse sugar, for sprinkling
  • Fresh thyme, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Melt butter in a medium skillet over medium heat. Add apple slices and sauté for 3–4 minutes until slightly softened. Stir in maple syrup and cook another 5–6 minutes until apples are glossy, golden, and tender. Set aside to cool slightly.
  2. Roll out puff pastry on a lightly floured surface to about 12×14 inches. Place the brie wheel in the center. Spread apple butter or fig preserves over the top of the brie, then layer the caramelized apples on top. Fold the pastry over the brie, sealing the edges tightly. Trim excess pastry if needed.
  3. Place the wrapped brie seam-side down on the prepared baking sheet. Brush the top and sides with beaten egg, then sprinkle with coarse sugar. Bake for 20–25 minutes until the pastry is deep golden brown and crisp. Let rest for 5–10 minutes, garnish with fresh thyme, and serve warm with crackers or fruit.

Notes

For seasonal variations, swap apple butter with fig jam or cranberry preserves. Use Pink Lady or Gala apples if Honeycrisp are unavailable. Serve with sliced baguette, crackers, or fresh fruit for dipping.
