Gingerbread Cupcakes with Cinnamon Frosting

Delicious gingerbread cupcakes topped with creamy cinnamon frosting and decorated with gingerbread men cookies

  • 1 3/4 cup cake flour
  • 1/2 cup unsalted butter, at room temperature
  • 1/3 cup molasses
  • 1/2 cup dark brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp ground cloves
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 3/4 cup milk
  • 1/2 cup unsalted butter (for frosting), at room temperature
  • 4 oz cream cheese, at room temperature
  • 2 tsp vanilla extract (for frosting)
  • 2 cups powdered sugar
  • 1/2 tsp cinnamon (for frosting)
  • 1 Tbsp heavy whipping cream or milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners
  2. In a large bowl, cream together 1/2 cup unsalted butter and dark brown sugar until light and fluffy
  3. Beat in eggs one at a time, then add molasses and 1 tsp vanilla extract, mixing until combined
  4. In a separate bowl, whisk together cake flour, baking powder, baking soda, cloves, cinnamon, and ground ginger
  5. Alternate adding dry ingredients and milk to the wet ingredients, beginning and ending with dry ingredients, mixing until just combined
  6. Divide batter evenly among prepared muffin cups, filling each about 2/3 full
  7. Bake for 18-22 minutes until a toothpick inserted in the center comes out clean
  8. Cool cupcakes in pan for 5 minutes, then transfer to a wire rack to cool completely
  9. For the frosting, beat 1/2 cup softened butter and 4 oz cream cheese together until smooth
  10. Add 2 tsp vanilla extract and mix well
  11. Gradually add powdered sugar and 1/2 tsp cinnamon, beating until light and fluffy
  12. Add 1 Tbsp heavy whipping cream or milk and beat until frosting reaches desired consistency
  13. Pipe or spread frosting onto cooled cupcakes
  14. Decorate with gingerbread men cookies if desired

Notes

This recipe makes 12 cupcakes. The cupcakes can be decorated with small gingerbread men cookies for a festive presentation. Store frosted cupcakes in an airtight container in the refrigerator for up to 3 days.
