Gingerbread Cake with Vanilla Glaze

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup molasses
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup hot water
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and cloves.
  3. In another bowl, mix molasses, brown sugar, melted butter, and egg until smooth.
  4. Gradually stir the dry ingredients into the wet mixture. Add hot water and mix until combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  6. Let the cake cool completely. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the cake.
