Shrimp Scampi with Pasta

A classic seafood dish made with shrimp cooked in a butter, garlic, and white wine sauce, served over pasta.

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup white wine
  • 1/4 cup freshly squeezed lemon juice
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound linguine pasta
  • 1/4 cup chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the garlic and cook for 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for about 2-3 minutes per side, until they turn pink and are fully cooked. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the white wine and lemon juice. Bring to a simmer and cook until the liquid is reduced by half, about 2 minutes.
  5. Stir in the remaining 2 tablespoons of butter until melted. Season with salt, pepper, and parsley.
  6. Add the cooked linguine to the skillet, tossing to coat with the sauce. If the sauce seems too thick, add some reserved pasta water.
  7. Return the shrimp to the skillet and toss everything together to combine.

Notes

This recipe is quick, flavorful, and perfect for a weeknight dinner. You can adjust the amount of garlic to your taste, and consider adding some red pepper flakes for extra spice.
