Creamy Garlic Parmesan Chicken Tortellini and Broccoli

  • 12 oz cheese tortellini (fresh or frozen)
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 cups broccoli florets
  • Salt, pepper, and Italian herbs
  • A handful of chopped fresh parsley

Instructions

  1. Cook the tortellini according to package instructions and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  4. Add the broccoli to the skillet and cook until tender, about 3-4 minutes.
  5. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer and let cook for 2-3 minutes until slightly thickened.
  6. Stir in the Parmesan cheese until melted and smooth. Season with salt, pepper, and Italian herbs.
  7. Return the cooked chicken to the skillet and stir to coat with the sauce.
  8. Combine the cooked tortellini with the chicken and sauce. Garnish with parsley and serve hot.
