Garlic Parmesan Chicken and Potatoes

A flavorful one-pan dish featuring tender chicken and crispy potatoes coated in garlic and parmesan.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced potatoes with 2 tablespoons olive oil, minced garlic, oregano, basil, salt, and pepper.
  3. Spread potatoes on a baking sheet and bake for 15 minutes.
  4. Meanwhile, coat chicken breasts with remaining olive oil and parmesan cheese.
  5. Remove baking sheet from oven, push potatoes to one side, and add chicken to the other side.
  6. Bake for another 15-20 minutes until chicken is cooked through and potatoes are crispy.
  7. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
