Garlic Parmesan Chicken and Potatoes

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
  2. In a small bowl, whisk together olive oil, garlic, parmesan, thyme, oregano, salt, and pepper.
  3. Place chicken and potatoes on the baking sheet. Drizzle with the garlic parmesan mixture and toss to coat evenly.
  4. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender, stirring potatoes halfway through.
  5. Garnish with fresh parsley before serving.
