For the Crust:
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- In a small bowl, whisk together olive oil, garlic, parmesan, thyme, oregano, salt, and pepper.
- Place chicken and potatoes on the baking sheet. Drizzle with the garlic parmesan mixture and toss to coat evenly.
- Bake for 25-30 minutes until chicken is cooked through and potatoes are tender, stirring potatoes halfway through.
- Garnish with fresh parsley before serving.
