Garlic Butter Steak Bites with Parmesan Cream Sauce

Tender steak bites tossed in aromatic garlic butter and served over cheesy mashed potatoes, all smothered in a decadent parmesan cream sauce.

  • 2 lbs steak (filet, ribeye, or sirloin), cut into bite-sized pieces
  • 45 tablespoons avocado oil
  • 5 tablespoons butter, divided
  • 10 cloves garlic, minced and divided
  • 1.5 cups heavy cream
  • 2 green onions, diced (green and white parts)
  • 1 teaspoon red pepper flakes (less if desired)
  • 2/3 cup parmesan cheese, grated/shredded/shaved
  • 4 lbs russet potatoes, peeled and quartered
  • 1 cup half and half, warmed
  • 6 tablespoons salted butter, melted
  • 3/4 cup Monterey Jack cheese, shredded (or mozzarella, pepper jack, etc.)
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Prepare the blackened seasoning by mixing smoked paprika, cayenne pepper, onion powder, garlic powder, black pepper, salt, thyme, and oregano in a small bowl. Set aside.
  2. Season the steak bites generously with the blackened seasoning.
  3. Heat avocado oil in a large skillet over medium-high heat. Add steak bites in a single layer (work in batches if needed) and sear until browned on all sides, about 2-3 minutes per side. Remove steak bites and set aside.
  4. In the same skillet, melt 2 tablespoons of butter over medium heat. Add half of the minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the remaining minced garlic, green onions, red pepper flakes, and parmesan cheese. Cook, stirring frequently, until the sauce thickens slightly, about 3-4 minutes. Return the steak bites to the skillet and toss to coat in the sauce. Keep warm.
  6. For the mashed potatoes, boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  7. Add warmed half and half, melted butter, Monterey Jack cheese, garlic powder, salt, and pepper to the potatoes. Mash until smooth and creamy.
  8. Serve the garlic butter steak bites over the cheesy mashed potatoes, spooning extra parmesan cream sauce over the top.

Notes

For best results, use a high-smoke-point oil like avocado oil for searing the steak. Adjust the amount of red pepper flakes to control the heat level. The parmesan cream sauce can be made ahead and gently reheated before serving.
