Garlic Butter Steak Bites with Creamy Mashed Potatoes

Juicy garlic butter steak bites served over creamy mashed potatoes made with sour cream, chives, and a warm milk and butter blend. The steak is perfectly seared and tossed in a rich, garlicky butter sauce with shallots and fresh parsley, paired with ultra-creamy mashed potatoes for a comforting and elegant meal.

  • 1.5 lbs sirloin or NY strip steak, cut into 1-inch bite-size cubes
  • 1 tbsp Dan-O's Preem-O Seasoning (or preferred steak seasoning)
  • Salt, to taste
  • 1 tbsp oil (vegetable or canola)
  • 46 tbsp unsalted butter
  • 1 small shallot, finely diced
  • 1 head garlic, finely minced
  • 2 tbsp chopped fresh parsley (or chives)
  • Optional: squeeze of lemon or dash of hot sauce
  • 2.5 lbs potatoes (Yukon Gold or Russet), peeled and cubed
  • 1/2 cup sour cream
  • 1/2 cup warm milk
  • 4 tbsp unsalted butter (for mashed potatoes)
  • 2 tbsp chopped chives (for mashed potatoes)
  • Salt and pepper, to taste

Instructions

  1. Season the steak cubes with Dan-O's Preem-O Seasoning and salt. Let sit for 15 minutes.
  2. Heat oil in a large skillet over high heat. Sear steak bites for about 2 minutes per side until golden crust forms. Work in batches if needed. Remove and set aside.
  3. Lower heat to medium-low. Melt butter in the skillet, then sauté minced garlic and diced shallot until fragrant, about 30 seconds.
  4. Return steak bites to the skillet and toss in the garlic butter. Remove steak bites and half the butter mixture to a bowl, leaving the rest in the pan.
  5. Add heavy cream to the skillet with remaining butter and bring to a low simmer briefly. Stir in grated Parmesan cheese and chopped parsley until sauce thickens. Season with salt and pepper.
  6. For mashed potatoes: Boil peeled and cubed potatoes in salted water until fork-tender, about 20-25 minutes. Drain and return to pot.
  7. Mash potatoes until smooth. Stir in butter, warm milk, sour cream, chopped chives, salt, and pepper until creamy and well combined.
  8. Serve steak bites over a bed of creamy mashed potatoes, drizzled with the garlic butter sauce. Optionally finish with a squeeze of lemon or dash of hot sauce.

Notes

For best results, use a cast iron skillet to get a good sear on the steak bites. The mashed potatoes can be made ahead and reheated gently. Adjust seasoning and creaminess of mashed potatoes to your preference. Leftover mashed potatoes make great next-day meals.
