For the Crust:
- 1 large pineapple, peeled and sliced into rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup cold sparkling water
- 1 tablespoon sugar
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a deep frying pan over medium heat to 350°F (175°C).
- In a bowl, whisk together flour, cornstarch, baking powder, salt, and sugar. Gradually add sparkling water, stirring until a smooth batter forms.
- Dip each pineapple ring into the batter, ensuring it’s fully coated, then carefully place it into the hot oil.
- Fry for 2-3 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
- Serve warm, optionally dusted with powdered sugar or drizzled with honey.
