Crockpot French Onion Meatloaf with Melted Swiss Cheese

Slow cooker meatloaf infused with French onion flavors from caramelized onions, onion soup mix, and melted Swiss cheese, served with rich juices for a tender, flavorful twist on classic meatloaf.

  • 2 lbs lean ground beef
  • 3/4 cup Italian breadcrumbs
  • 1 envelope beefy onion soup mix or French onion soup mix
  • 2 large eggs
  • 3/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 23 large sweet onions, thinly sliced
  • 3 tablespoons butter
  • 10.5 oz can condensed French onion soup
  • 8 slices Swiss cheese (5 diced for mix, 3 for topping)

Instructions

  1. In a skillet over medium-high heat, melt butter and cook sliced onions, stirring occasionally, until caramelized and browned, about 10-15 minutes. Transfer to the bottom of a 5-6 quart slow cooker.
  2. In a large bowl, combine ground beef, breadcrumbs, onion soup mix, eggs, milk, Worcestershire sauce, and diced 5 slices of Swiss cheese. Mix until combined and shape into a loaf. Place on top of onions in slow cooker. Pour condensed French onion soup over the top.
  3. Cover and cook on low for 4-6 hours or high for 3 hours, until internal temperature reaches 165°F.
  4. Five minutes before serving, top with remaining 3 slices Swiss cheese, cover, and cook until melted. Slice and serve with caramelized onions and juices, garnished with parsley if desired.

Notes

For best results, use a meat thermometer to ensure doneness. Optional: Add a teaspoon of sugar to onions while caramelizing for extra sweetness. Leftovers reheat well and can be stored in an airtight container for up to 3 days.
