For the Crust:
- 3 lbs beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 4 cups beef broth
- 1/4 cup soy sauce
- 1 tbsp Worcestershire sauce
- 6 French baguettes or rolls
- 6 slices provolone cheese
Instructions
1. Prepare the Crust:
- Place beef chuck roast, onion, garlic, thyme, rosemary, and bay leaf in a slow cooker.
- Pour beef broth, soy sauce, and Worcestershire sauce over the beef.
- Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender and shreds easily.
- Remove beef from slow cooker and shred with two forks. Strain the cooking liquid to use as au jus.
- Preheat oven to 350°F (175°C). Slice baguettes in half and toast lightly.
- Pile shredded beef onto the bottom halves of the baguettes, top with provolone cheese, and place under the broiler until cheese is melted.
- Serve sandwiches with small bowls of warm au jus for dipping.
