For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup milk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)
  • 2 tbsp melted butter (for coating)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed (do not overmix).
  5. Spoon batter into mini muffin cups, filling each about 2/3 full.
  6. Bake for 10-12 minutes or until a toothpick comes out clean.
  7. While muffins bake, mix 1/4 cup sugar and cinnamon in a small bowl.
  8. Let muffins cool slightly, then brush with melted butter and roll in cinnamon sugar mixture.
