For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup milk
- 1/4 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for coating)
- 1 tbsp ground cinnamon (for coating)
- 2 tbsp melted butter (for coating)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, egg, and vanilla extract.
- Combine wet and dry ingredients until just mixed (do not overmix).
- Spoon batter into mini muffin cups, filling each about 2/3 full.
- Bake for 10-12 minutes or until a toothpick comes out clean.
- While muffins bake, mix 1/4 cup sugar and cinnamon in a small bowl.
- Let muffins cool slightly, then brush with melted butter and roll in cinnamon sugar mixture.
