Five Cheese Baked Macaroni and Cheese

An ultra-cheesy baked macaroni and cheese casserole made with five different cheeses and a unique blend of spices for rich flavor and creamy texture.

  • 1 pound large elbow macaroni
  • 1/2 cup extra sharp cheddar cheese, shredded
  • 1/2 cup smoked gouda cheese, shredded
  • 1/2 cup smoked gruyere cheese, shredded
  • 1/2 cup colby jack cheese, shredded
  • 1 cup American or Velveeta cheese, cubed
  • 1 can evaporated milk (12 oz)
  • 1 large egg
  • 4 tablespoons unsalted butter
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon granulated garlic powder
  • 1/2 teaspoon granulated onion powder
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt butter over medium heat.
  4. In a bowl, whisk the egg slightly, then add evaporated milk and whisk to combine.
  5. Add seasoned salt, garlic powder, onion powder, ground mustard, paprika, black pepper, and cayenne pepper to the milk and egg mixture; whisk until combined.
  6. Add the cheese blend (except the American or Velveeta cheese) to the saucepan with melted butter and stir until melted and smooth.
  7. Slowly whisk in the milk and egg mixture into the cheese sauce until fully incorporated and smooth.
  8. Remove from heat and stir in the cooked macaroni until evenly coated with cheese sauce.
  9. Transfer macaroni and cheese mixture to a greased baking dish.
  10. Top with reserved 1/2 cup each of cheddar, gouda, gruyere, and colby jack cheeses.
  11. Bake in preheated oven for 25-30 minutes or until bubbly and golden on top.
  12. Let cool for 5 minutes before serving.

Notes

Using evaporated milk reduces water content, preventing curdling and ensuring a creamy texture. You can substitute whole milk but reheating may cause separation. The smoked cheeses add a unique depth of flavor.
