Kale White Bean Salad, Erewhon Dupe Recipe

Ingredients

Scale
  • 1 bunch kale (thick stems removed and leaves roughly chopped)
  • 1 teaspoon sea salt (plus more to taste)
  • 1 can white beans, drained, about 1½ cups
  • 1 firm-ripe avocado (sliced or chopped)
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup hemp seeds
  • 1 lemon, juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon maple syrup
  • ¼ cup olive oil
  • ½ teaspoon sea salt
  • 1 clove garlic, grated (add if you like the flavor of garlic!)
