Kale White Bean Salad, Erewhon Dupe Recipe
- 1 bunch kale (thick stems removed and leaves roughly chopped)
- 1 teaspoon sea salt (plus more to taste)
- 1 can white beans, drained, about 1½ cups
- 1 firm-ripe avocado (sliced or chopped)
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup hemp seeds
- 1 lemon, juice
- 2 teaspoons Dijon mustard
- 1 tablespoon maple syrup
- ¼ cup olive oil
- ½ teaspoon sea salt
- 1 clove garlic, grated (add if you like the flavor of garlic!)
