  • 1 cup fresh strawberries, diced
  • 1 cup whipped cream
  • 1 tablespoon powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
  4. Roll dough into small balls and press into the muffin tin to form cups. Bake for 12-15 minutes until edges are golden.
  5. Let cookie cups cool completely in the tin before removing.
  6. Fill each cup with whipped cream and top with diced strawberries. Dust with powdered sugar before serving.
