For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 2 tbsp all-purpose flour
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla and flour.
- Pour 2/3 of the cheesecake batter over the crust. Stir lemon juice and zest into the remaining batter.
- Drop spoonfuls of lemon batter over the plain batter. Use a knife to swirl gently for a marbled effect.
- Bake for 30-35 minutes until set. Cool completely before chilling for at least 4 hours.
