For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 tsp cotton candy flavoring
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup rainbow sprinkles
1/2 cup crushed cotton candy (for topping)
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and cotton candy flavoring.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, mixing until just combined.
Fold in rainbow sprinkles. Scoop dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
Bake for 10-12 minutes until edges are lightly golden. Let cool for 2 minutes, then press crushed cotton candy gently onto the tops of the warm cookies.
Transfer cookies to a wire rack to cool completely before serving.
