For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp cotton candy flavoring
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup rainbow sprinkles
  • 1/2 cup crushed cotton candy (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and cotton candy flavoring.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, mixing until just combined.
  4. Fold in rainbow sprinkles. Scoop dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
  5. Bake for 10-12 minutes until edges are lightly golden. Let cool for 2 minutes, then press crushed cotton candy gently onto the tops of the warm cookies.
  6. Transfer cookies to a wire rack to cool completely before serving.
