For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp cotton candy flavoring
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup rainbow sprinkles
- 1/2 cup crushed cotton candy (for topping)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and cotton candy flavoring.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fold in rainbow sprinkles. Scoop dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden. Let cool for 2 minutes, then press crushed cotton candy gently onto the tops of the warm cookies.
- Transfer cookies to a wire rack to cool completely before serving.
