Easy Vegetable Beef Soup

A hearty and healthy vegetable beef soup packed with tender beef, fresh vegetables, and a flavorful broth. Perfect for a comforting meal any day of the week.

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes (canned or fresh)
  • 4 cups beef broth
  • 2 cups water
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  2. Add chopped onion and minced garlic to the pot. Cook until onions are translucent, about 3-4 minutes.
  3. Stir in carrots, celery, green beans, and corn. Cook for another 5 minutes, stirring occasionally.
  4. Add diced tomatoes, beef broth, water, dried basil, and dried oregano. Stir well to combine.
  5. Bring the soup to a boil, then reduce heat to low and simmer uncovered for 30-40 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste before serving.

Notes

For a thicker soup, you can add a tablespoon of tomato paste or a small amount of flour mixed with water during the simmering step. Feel free to substitute or add other vegetables like potatoes or peas based on your preference.
