  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine flour, brown sugar, baking powder, and salt. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared pan to form the crust.
  4. In a separate bowl, whisk together pumpkin puree, granulated sugar, egg, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Sprinkle the remaining crumble mixture evenly over the pumpkin layer.
  7. Bake for 35-40 minutes or until the topping is golden brown and the filling is set.
  8. Allow bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

For best results, chill the bars for at least an hour before serving to allow the filling to set fully. You can also add chopped nuts to the crumble topping for extra texture.
