For the Crust:
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (3.4 oz) package instant vanilla pudding mix
- 1 1/2 cups cold milk
- 2 large ripe peaches, peeled and diced
- Whipped cream for garnish (optional)
Instructions
1. Prepare the Crust:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture firmly into the bottom and sides of 8 mini tart pans or a muffin tin.
- In another bowl, whisk pudding mix and cold milk for 2 minutes until thickened. Let stand for 5 minutes to set.
- Spoon custard into crusts, top with diced peaches, and refrigerate for at least 1 hour before serving. Garnish with whipped cream if desired.
