Easy No Bake Peach Custard Mini Tarts

Simple, elegant mini tarts with a creamy custard filling and fresh peaches, requiring no oven time.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 2 large ripe peaches, peeled and diced
  • Whipped cream for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture firmly into the bottom and sides of 8 mini tart pans or a muffin tin.
  2. In another bowl, whisk pudding mix and cold milk for 2 minutes until thickened. Let stand for 5 minutes to set.
  3. Spoon custard into crusts, top with diced peaches, and refrigerate for at least 1 hour before serving. Garnish with whipped cream if desired.
