For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in milk, lemon zest, and lemon juice.
  4. Gradually mix dry ingredients into the wet ingredients until just combined. Pour batter into the prepared loaf pan.
  5. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack.
  6. For the glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.
