For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives, pitted
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tsp dill, chopped
Instructions
1. Prepare the Crust:
- In a bowl, toss chicken cubes with olive oil, oregano, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat and cook chicken for 6-8 minutes until fully cooked.
- In a small bowl, mix Greek yogurt, lemon juice, and dill to make the sauce.
- Assemble bowls by dividing quinoa, cooked chicken, cucumber, tomatoes, red onion, and olives among four bowls.
- Drizzle with the yogurt sauce and serve immediately.
