Easy Enchiladas Ground Beef Soup

A quick and easy beef enchilada soup filled with ground beef, beans, corn, and enchilada sauce, perfect for a family-friendly meal made with everyday pantry ingredients.

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 4 cups beef bone broth
  • 1 cup enchilada sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chiles

Instructions

  1. In a large skillet, brown the ground beef with diced onion over medium-high heat until no longer pink. Drain excess grease.
  2. Add taco seasoning to the beef mixture and stir to combine.
  3. In a large pot, combine the browned beef mixture, beef bone broth, enchilada sauce, diced tomatoes, corn, black beans, and green chiles.
  4. Bring the soup to a boil, then reduce heat and simmer for 10 minutes to blend flavors.
  5. Serve hot.

Notes

This soup is easy to prepare in one pot and uses common pantry ingredients. It freezes well for up to a month and leftovers can be refrigerated for 3-4 days, making it convenient for meal prep.
