Cheesy Tomato Focaccia Rolls

For the Crust:

  • 3 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup warm water
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1 tbsp dried rosemary

Instructions

1. Prepare the Crust:

  1. In a bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Knead until a smooth dough forms.
  3. Cover the dough and let it rise in a warm place for 1 hour or until doubled in size.
  4. Preheat oven to 375°F (190°C). Punch down the dough and divide into 8 equal portions.
  5. Shape each portion into a roll and place on a greased baking sheet. Press cherry tomato halves into the tops.
  6. Sprinkle with mozzarella cheese and dried rosemary. Bake for 20-25 minutes until golden brown.
