Easy Cheeseburger Meatloaf Cheddar Roll

A delicious and easy-to-make meatloaf roll filled with cheddar cheese and classic cheeseburger flavors, perfect for a comforting family dinner.

  • 1 1/2 pounds ground beef
  • 1 cup shredded cheddar cheese
  • 1/2 cup bread crumbs
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sliced pickles
  • 1/2 cup shredded cheddar cheese (for filling)
  • Additional ketchup for topping

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, ketchup, chopped onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
  3. On a large piece of parchment paper, spread the meat mixture into a rectangle about 9×12 inches.
  4. Sprinkle the shredded cheddar cheese evenly over the meat mixture, then layer the sliced pickles on top.
  5. Carefully roll the meat mixture into a log shape using the parchment paper to help, sealing the edges.
  6. Place the meatloaf roll seam side down in a baking dish.
  7. Spread additional ketchup over the top of the meatloaf roll.
  8. Bake for 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  9. Let rest for 10 minutes before slicing and serving.

Notes

For best results, use freshly shredded cheddar cheese and allow the meatloaf to rest before slicing to keep it moist. You can customize the filling with your favorite burger toppings like cooked bacon or sautéed mushrooms.
