Cauliflower Fritters

Crispy and flavorful cauliflower fritters that make a perfect appetizer or side dish.

For the Crust:

  • 1 medium head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil for frying

Instructions

1. Prepare the Crust:

  1. Steam or boil cauliflower florets until tender, about 5-7 minutes. Drain well and mash with a fork.
  2. In a large bowl, combine mashed cauliflower, flour, Parmesan cheese, egg, garlic, salt, pepper, paprika, and parsley. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture per fritter and flatten slightly. Fry for 3-4 minutes per side until golden brown.
  4. Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
