Easy Blueberry Velvet Cheesecake

A creamy and velvety cheesecake with a burst of blueberry flavor, perfect for any occasion.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup blueberry preserves
  • 1/2 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, eggs, and vanilla, mixing well.
  4. Pour half the batter over the crust. Drop spoonfuls of blueberry preserves over the batter, then swirl gently with a knife.
  5. Pour remaining batter over the top and smooth it out. Scatter fresh blueberries on top.
  6. Bake for 50-60 minutes until the center is set. Let cool, then refrigerate for at least 4 hours before serving.
