For the Crust:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup milk
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 cup boiling water
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a bowl, whisk together flour, baking powder, salt, and 3/4 cup sugar.
- Stir in milk, melted butter, and vanilla extract until combined. Fold in blueberries and lemon juice.
- Spread batter evenly into the prepared baking dish.
- Pour boiling water over the batter (do not stir).
- Bake for 45-50 minutes or until the top is golden and the cake is set. Let cool slightly before serving.
