For the Crust:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
4 oz cream cheese, softened
1/4 cup blueberry jam
1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
In another bowl, mix cream cheese, blueberry jam, and powdered sugar until smooth.
Drop tablespoon-sized portions of cookie dough onto baking sheets. Make a small well in each and add a teaspoon of the cream cheese mixture. Swirl gently with a knife.
Bake for 12-15 minutes or until edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to a wire rack.
