  • 1 lb ground chicken
  • 1/4 cup dill pickle juice
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped dill pickles
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, sliced jalapeños

Instructions

  1. In a large bowl, combine ground chicken, dill pickle juice, ranch dressing, chopped dill pickles, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
  2. Heat a non-stick skillet over medium-high heat. Spoon about 1/4 cup of the chicken mixture into the skillet and smash it down into a thin patty.
  3. Sprinkle shredded cheddar cheese around the edges of the patty in the skillet to form a crispy cheese lace. Cook for 3-4 minutes until the edges are golden and crispy.
  4. Flip the patty carefully and cook for another 2-3 minutes until the chicken is cooked through and cheese lace is crispy on both sides.
  5. Repeat with remaining chicken mixture to make 8 patties.
  6. Warm the tortillas in a dry skillet or microwave.
  7. Assemble tacos by placing a chicken patty on each tortilla and adding optional toppings as desired.
  8. Serve immediately.

Notes

For best results, use a non-stick skillet to create the crispy cheese lace without sticking. You can substitute cheddar with pepper jack for a spicy twist. These tacos are great served with extra ranch dressing or a squeeze of lime.
