Decadent Cinnamon Roll Cheesecake

For the Crust:

  • 2 cans refrigerated cinnamon roll dough (8 rolls each)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Separate cinnamon rolls and cut each into quarters. Press half into the bottom of the pan.
  3. In a bowl, beat cream cheese, granulated sugar, vanilla, and egg until smooth. Pour over the cinnamon roll layer.
  4. Top with remaining cinnamon roll pieces. Drizzle melted butter over the top.
  5. Mix brown sugar and cinnamon, then sprinkle evenly over the top.
  6. Bake for 30-35 minutes until golden and set. Cool before serving.
