Decadent Cinnamon Roll Cheesecake

For the Crust:

  • 2 cans refrigerated cinnamon roll dough (8 rolls each)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Separate cinnamon rolls and cut each into quarters. Press half into the bottom of the pan.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well.
  4. Pour cream cheese mixture over the cinnamon roll layer. Top with remaining cinnamon roll pieces.
  5. Mix melted butter, brown sugar, and cinnamon. Drizzle over the top.
  6. Bake for 30-35 minutes until center is set. Cool completely before serving.
