Decadent Carrot Cake Bars with Cream Cheese Frosting

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Add eggs and oil to the dry ingredients, mixing until just combined. Fold in grated carrots, pineapple, and walnuts (if using).
  4. Spread the batter evenly into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.
  5. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  6. Spread frosting over cooled bars. Chill for at least 1 hour before slicing into squares.
