For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp lime zest
- 2 tbsp lime juice
- 1 cup fresh blackberries
- 1/4 cup blackberry jam
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Line a muffin tin with cupcake liners.
- Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press 1 tbsp mixture into each liner to form crust.
- Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla, lime zest, and lime juice.
- Spoon cheesecake batter over crusts. Top each with 2-3 blackberries.
- Bake for 20-25 minutes until set. Cool completely, then refrigerate for 2 hours.
- Before serving, warm blackberry jam slightly and drizzle over cupcakes.
