Crispy Pickle Cheese Bites

These crispy, cheesy, and tangy pickle bites are the perfect party snack. They combine the crunch of pickles with gooey cheese, all wrapped in a crispy breading for a delicious bite-sized treat.

  • 1 cup dill pickle slices, patted dry
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, mix together cream cheese, cheddar cheese, garlic powder, onion powder, paprika, and black pepper until well combined.
  2. Spread about 1/2 teaspoon of the cheese mixture onto each pickle slice, then sandwich with another pickle slice to form a 'bite.' Repeat with remaining pickles and cheese mixture.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Dredge each pickle bite in flour, then dip in egg, and finally coat with panko, pressing gently to adhere.
  5. Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
  6. Fry the pickle bites in batches, turning once, until golden brown and crispy, about 2–3 minutes per side.
  7. Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite dipping sauce.

Notes

For best results, make sure pickles are well-dried before assembling. These bites are best served fresh, but you can keep them warm in a low oven if needed. For a lighter version, try air frying at 400°F for 8–10 minutes, flipping halfway.
