For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease it.
- Place chicken breasts in a bowl and cover with buttermilk. Let marinate for at least 15 minutes.
- In a shallow dish, mix flour, panko breadcrumbs, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to coat evenly.
- Place coated chicken on the prepared baking sheet. Drizzle with olive oil for extra crispiness.
- Bake for 25-30 minutes, flipping halfway through, until chicken is golden brown and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
