For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease it.
  2. Place chicken breasts in a bowl and cover with buttermilk. Let marinate for at least 15 minutes.
  3. In a shallow dish, mix flour, panko breadcrumbs, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  4. Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to coat evenly.
  5. Place coated chicken on the prepared baking sheet. Drizzle with olive oil for extra crispiness.
  6. Bake for 25-30 minutes, flipping halfway through, until chicken is golden brown and internal temperature reaches 165°F (74°C).
  7. Let rest for 5 minutes before serving.
