For the Crust:

  • 1 pound button mushrooms, cleaned and stems trimmed
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix breadcrumbs, Parmesan cheese, garlic, parsley, salt, and pepper.
  3. Dredge each mushroom in flour, then dip in beaten eggs, and finally coat with the breadcrumb mixture.
  4. Place coated mushrooms on the prepared baking sheet. Drizzle with olive oil.
  5. Bake for 20-25 minutes until golden brown and crispy. Serve warm.
