Ingredients

Scale
  • 2 flatbreads or naan (mini naans recommended)
  • 6 oz brie cheese, sliced (rind on or off, your choice)
  • 1/3 cup dried cranberries
  • 1/3 cup walnuts, toasted and roughly chopped
  • 1 tablespoon olive oil
  • 1/4 cup maple syrup
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 12 sprigs fresh thyme, leaves picked

Instructions

  1. Preheat the oven to 400ºF.
  2. Brush each flatbread lightly with olive oil and place on a baking sheet.
  3. Arrange slices of brie evenly across the flatbreads.
  4. Sprinkle dried cranberries and toasted walnuts over the brie.
  5. Bake for 8-10 minutes or until the brie is melted and flatbreads are crisp and golden.
  6. While baking, combine maple syrup and red pepper flakes in a small saucepan and warm gently over low heat for 2-3 minutes, then remove from heat.
  7. Once out of the oven, drizzle the flatbreads generously with the warm maple syrup mixture.
  8. Garnish with fresh thyme leaves.
  9. Slice and serve warm.

Notes

You can substitute dried cranberries with other dried fruits like dates, apricots, or tart cherries. Nuts can also be swapped according to preference. The maple syrup drizzle can be adjusted for sweetness and spice by varying the amount of red pepper flakes.
