Crispy Brussels Sprouts with Bacon and Creamy Mustard Sauce

  • pounds brussels sprouts, trimmed and quartered
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 strips bacon, cut into 1-inch pieces
  • 2 tablespoons butter
  • 1 small onion, diced
  • 1 clove garlic, chopped
  • 2 tablespoons flour
  • 1 cup milk or cream
  • 2 tablespoons grainy mustard
  • 1 tablespoon white miso (optional)
  • ½ cup Parmigiano Reggiano cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (if roasting sprouts separately).
  2. Trim and quarter the Brussels sprouts.
  3. Heat olive oil in a skillet over medium heat. Add Brussels sprouts, season with salt and pepper, and cook until crispy and caramelized, about 10-15 minutes.
  4. In a separate pan, cook bacon pieces until crispy. Remove bacon and set aside, leaving some fat in the pan.
  5. Add butter to the pan with bacon fat, then sauté diced onion and chopped garlic until softened.
  6. Sprinkle flour over the onion and garlic mixture and cook for 1-2 minutes to form a roux.
  7. Gradually whisk in milk or cream, stirring constantly until the sauce thickens.
  8. Stir in grainy mustard, white miso (if using), and grated Parmigiano Reggiano cheese. Season with salt and pepper to taste.
  9. Combine crispy Brussels sprouts and bacon with the creamy mustard sauce, tossing gently to coat.
  10. Serve warm as a flavorful side dish.

Notes

For best results, ensure Brussels sprouts are well dried before cooking to achieve maximum crispiness. The white miso is optional but adds a subtle umami depth to the sauce. This dish pairs well with roasted meats or as a hearty vegetarian side if bacon is omitted.
