Creamy Ritz Cracker Chicken Casserole

A creamy and comforting chicken casserole topped with buttery Ritz crackers for a crunchy finish. This easy-to-make dish combines shredded chicken with sour cream and soup, baked to bubbly perfection.

  • 3 cups cooked shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 green onions, chopped
  • 1 sleeve Ritz crackers, crushed (about 30 crackers)
  • 4 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 2.5-quart baking dish or 9×9-inch square dish with non-stick cooking spray.
  2. In a large bowl, mix together the cream of chicken soup, sour cream, and chopped green onions.
  3. Stir in the shredded chicken until well combined.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. In the same bowl, combine the crushed Ritz crackers with melted butter and mix well.
  6. Sprinkle the cracker mixture evenly over the top of the casserole.
  7. Bake for 25-30 minutes, or until the cracker topping is golden brown and the casserole is bubbly.
  8. Remove from oven and let cool slightly before serving.

Notes

For best results, use freshly shredded chicken. You can substitute cut-up chicken pieces if preferred, but shredded chicken blends better with the creamy sauce. Serve with a side of vegetables or salad for a complete meal.
