Pistachio Fudge

A creamy, easy homemade pistachio fudge that requires no candy thermometer or special skills. Instant pistachio pudding mix adds authentic pistachio flavor and a beautiful green hue.

  • 3/4 cup unsalted butter
  • 1 cup granulated sugar
  • 3/4 cup heavy cream
  • pinch of salt
  • 3.5 oz package instant pistachio pudding mix (powder only)
  • 7 oz marshmallow fluff
  • 11 oz white chocolate
  • 1/4 cup shelled, chopped pistachios
  • 8 oz dark chocolate (melted for topping)

Instructions

  1. In a large saucepan over medium-high heat, combine butter, sugar, heavy cream, and salt. Bring to a rolling boil and boil for 5 minutes, stirring constantly. Remove from heat.
  2. In a large mixing bowl, add pistachio pudding mix, marshmallow fluff, and white chocolate. Pour the hot mixture over these ingredients and beat for about one minute until combined and chocolate is melted.
  3. Fold in chopped pistachios.
  4. Pour the mixture into a 9-inch square dish lined with parchment paper.
  5. Melt dark chocolate and spread it evenly over the top of the fudge.
  6. Let the fudge set for one hour until firm, then cut into pieces and serve.

Notes

This fudge is rich and packed with pistachio flavor, making it a delightful treat. Using marshmallow fluff adds a creamy texture without needing a candy thermometer. The dark chocolate topping adds a nice contrast and extra richness.
