Creamy Parmesan Italian Sausage Soup Recipe Delight

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces as it cooks.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and bring to a simmer. Let it cook for 10 minutes.
  4. Stir in the heavy cream, Parmesan cheese, basil, oregano, salt, and pepper. Simmer for another 10 minutes.
  5. Add the chopped spinach and cook until wilted, about 2 minutes.
  6. Serve hot with additional Parmesan cheese if desired.
